Scrambled Eggs with Smoked Salmon and Avocado
Serves 1:

Ingredients:
80g avocado
2 medium eggs
60g butter
Salt and pepper
Instructions:
Put a small saucepan on a low to medium heat and melt the butter.
Crack the eggs into a bowl and use a fork to beat them together.
When the butter has melted in the saucepan, carefully pour in the eggs.
Stir the eggs with a wodden spoon until they look fluffy.
Remove from heat and spoon out onto a plate.
Serve with sliced avocado, smoked salmon and season to taste.
