Lemon Cheesecake Ice Cream

Ingredients:
250g mascarpone cheese
50g xylitol
50g ground almonds
Lemon juice (2 tablespoons)
Instructions:
Melt xylitol in a pan with two tablespoons of water until it runs clear.
Add mascarpone, ground almonds, lemon juice and stir into a paste.
Freeze for 1 hour and serve.
