Crack eggs into a mixing bowl with a pinch of salt and pepper. Whisk the egg with a fork until smooth and frothy. Turn on the grill as you will be using it in step 4.
Melt butter in a frying pan and set to a high heat. Once the butter has melted, pour in egg mixture.
Finally chop the ham and mushrooms and when the omelette begins to cook and get firm on the bottom, add the chopped ham, mushrooms and grated cheese.
Place the frying pan under the grill for 5 minutes to cook the top half of the omelette.
Serve once the cheese has melted and omelette looks fluffy.
