Prawn Cocktail
Serves 1:

Ingredients:
210g cooked prawns
70g of lettuce
30mls mayonaisse
½ tablespoon of low sugar ketchup
chilli powder to taste
Instructions:
Firstly prepare the prawns-if using frozen cooked prawns, defrost as instructed. Allow the water to drain off then dry with some kitchen paper.
Mix the mayonaisse, low sugar ketchup and chilli powder together then fold thorough the prawns.
Wash and slice the lettuce, dry with kitchen paper and spread out on a plate.
Spoon the prawn mixture on top of the lettuce and enjoy!.
