60 grams of (nitrate free) chorizo sausage chopped up into small pieces
400 grams of passata or 1 tin of chopped tomatoes
½ ball of mozzarella to garnish
1 small red onion
1 tbsp olive oil
1 tsp of oregano
Instructions:
Set your pan to a medium heat and add oil. Chop spinach, onion and sausage.
Add onion and chorizo and fry for 2 minutes or so, then add spinach.
Add passata once spinach has wilted and stir to heat thoroughly.
When sauce begins to bubble, reduce to low heat and make 4 wells for the egg yolks and cover the pan with a lid or plate and allow to cook for 4 to 5 minutes, ensuring the eggs have cooked through.
Once the eggs have set, remove from heat, add shredded cheese and enjoy.
