Lemon Sherbet Melts
Serves 10:
- Carbs: 1 grams
- Fats : 15 grams
- Protein: 1 grams
- Prep time: 5 minutes
- Cooking time: 60 minutes
Ingredients:
- 120 grams of cream cheese
- 100 grams of coconut oil
- 100 grams of unsalted butter
- 2 tsp of vanilla extract
- Juice and zest of 1.5 lemons
- 2 tbsp of Xylitol
Instructions:
- Melt the coconut oil and the butter in a large bowl placed over a saucepan of boiling water.
- Once the mix has melted add in the lemon zest and juice, vanilla, cream cheese and xylitol. Use a hand blender or smoothie maker to combine until a mouse like consistency is achieved.
- Fill a silicone chocolate mould with the mix.
- Store in a freezer and allow 2-3 minutes to thaw slightly before serving.
