Baked Salmon with Couliflower Mash

Serves 1:

    Ingredients:

    • 1 medium salmon fillet
    • 200g of cauliflower
    • 30 mls of fresh cream
    • 15g of breadcrumbs
    • 30g pecans
    • 1 teaspoon dijon mustard
    • 1 teaspoon honey
    • 1 tablespoon butter
    • 1 teaspoon chopped parsley
    • 100g green beans

    Instructions:

    1. In a small pot add boilling water, a pinch of salt and cauliflower and boil for 15 minutes. When cooked, add cream and butter and mash until smooth for a creamier consistency. Put the mash into a blender for 30 seconds.
    2. Meanwhile, preheat oven to 2000c. Line a baking tray with non-stick baking paper. Combine the breadcrumbs, pecans, parsley, mustard and honey in a shallow bowl. Press 1 side of a salmon fillet into the breadcrumbs mixture to coat. Place the salmon on a prepared tray and cook for 20 to 25 minutes or until cooked to your liking.
    3. While the salmon is cooking add the green beans to a steamer and cook for 6 minutes (you can boil if preferred).
    4. Place the cauliflower mash on a plate and top with salmon. Serve the green beans on the side.
